Banana Bread

Ingredients:

  • 1 1/4 cups of white wheat flour
  • 1/2 cup of all purpose unbleached flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2/3 cup light brown sugar
  • 1/2 tsp salt
  • 3 ripe bananas peels
  • 1 egg
  • 3/4 cup milk
  • 4 Tbsp butter, melted

Directions:

  1. Preheat the oven to 350 degrees and prepare a loaf pan by spraying the bottom and sides with cooking spray.
  2. In a large bowl, whisk together the first six ingredients including the salt.
  3. In the bowl of a standing mixer, fitted with a paddle, beat together the bananas, egg, milk and butter.
  4. While the mixer is on low, slowly add the dry ingredients until the batter is well incorporated, do not over beat it.
  5. Pour the batter into the prepared loaf pan and sprinkle the top with Pumpkin Pie Spice or Apple Pie Spice. (or just use ground cinnamon.)
  6. Bake for 1 hour or until a toothpick inserted in the middle of the loaf comes out clean.
  7. When the pan is cool enough to handle, remove the banana bread and let cool on a wire rack.
