Banana Bread
Ingredients:
- 1 1/4 cups of white wheat flour
- 1/2 cup of all purpose unbleached flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2/3 cup light brown sugar
- 1/2 tsp salt
- 3 ripe bananas peels
- 1 egg
- 3/4 cup milk
- 4 Tbsp butter, melted
Directions:
- Preheat the oven to 350 degrees and prepare a loaf pan by spraying the bottom and sides with cooking spray.
- In a large bowl, whisk together the first six ingredients including the salt.
- In the bowl of a standing mixer, fitted with a paddle, beat together the bananas, egg, milk and butter.
- While the mixer is on low, slowly add the dry ingredients until the batter is well incorporated, do not over beat it.
- Pour the batter into the prepared loaf pan and sprinkle the top with Pumpkin Pie Spice or Apple Pie Spice. (or just use ground cinnamon.)
- Bake for 1 hour or until a toothpick inserted in the middle of the loaf comes out clean.
- When the pan is cool enough to handle, remove the banana bread and let cool on a wire rack.
