Its All Green for St. Patty's Day

Looking for some ideas for green colored foods to serve on St. Patty’s Day? Look in the produce section, it is filled with green. Cut up a tray full of assorted green veggies: celery, asparagus, broccoli, green beans, endive leaves, and sugar snap peas. Make a very green dip with plain whole milk yogurt, garlic, and spinach.

Ingredients:

  • 1 cup plain whole milk yogurt
  • 2 cloves garlic
  • 1 cup frozen chopped spinach, thawed and well drained
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 2 tsp dried dill weed
Directions:
  1. Put all the ingredients in a food processor and process until smooth. Season to taste with more salt and pepper.
Variations: Replace the spinach with a cup of fresh parsley, cilantro or basil and remove the dill from the recipe.

If you absolutely have to have green cookies or biscuits please use a food based green die and not the artificial food coloring. When I was doing a bit of research for this blog, I came across a website for a company called Seelecttea. They seem to have the biggest selection of organic vegetable based food coloring I could find.
  • Here are the ingredients for their green coloring: Vegetable and Plant Extract (no Chlorophyll)
  • Here are the ingredients for a popular brand of green food coloring: Water, Propylene Glycol, FD&C Yellow 5, FD&C Blue 1 and Propylpwaraben (Preservative)
