Has it Really Been Less Than A Month? |

Wow what a month. I just now had a moment and felt like writing for the first time in a while. The kids are in bed and asleep. Lunch is made for the morning as is chicken soup for later in the week. Dishes are done, laundry is working and the dishwasher is set to start in a few hours, Phew!
With starting a new 9 to 5 type job a month ago, the kids starting a new school, and keeping up with the regular activities of motherhood, plus my iLunchBox site, well coming up with something new to talk about is hard let alone being creative enough to come up with new recipes or versions of them.
I have to say, what I would like to say is, that I have found a hot lunch program and dedicated personnel that make me feel like there is hope for our children and the plight for a healthy lunch. The women running the Westhampton Beach School District Food Service Program are really listening to parents and enduring to find fresh, local produce and make food rather than reheat food. Aside from the regular hot lunch offering, which always seems to include whole grains and a few fresh fruit/vegetable offerings, there are also available freshly made salads and deli style sandwiches, fresh fruit and water available.
As many of you know by now I have one child allergic to wheat and dairy. When we enrolled at school, not only was I contacted by the food service professional, but by the school nurse as well, to see how they could make my son’s school year healthy and happier for both of us, including any special food items I may need included and available to him. WOW!
So what is on the menu this week? Well for those of my children opting out of the new hot lunch program available, we are having a pasta salad and honey dew melon tomorrow, Ploughman’s’ lunch, and a chicken apple salad creation I am working on now. I will post the recipe. Those opting in for hot lunch will be having Minestrone soup with grilled cheese on whole wheat, Turkey-Cranberry Wrap and Homemade Cheese Pizza (that the kids said was really good last week). I am happy to have the relief of a hot lunch program and equally as happy that the kids still request that I make lunch for them too.
