19 days down and 69 lunches so far

So we are one month into the school year. I have now packed 69 lunches as of today, and guess what there are 161 days left in the school year.  ARGH! Like many of you, some of the lunches are met with enthusiasm and other are met with complaints. With four children it is hard to please everyone every day, and I will not make four separate lunches each day. That is just crazy!

What I have learned is that sometime over the summer, my oldest daughter started “hating” sandwiches. My youngest daughter stopped liking any sandwich other than Peanut Butter and Jelly/Honey. My oldest son dislikes any time away from play time, even to eat lunch; so most of it goes in the garbage and then he is hungry later, snacking on the junk available to him at school (another topic for another time).  My youngest son, he is in preschool, eats most of his lunch, but since it is not mandatory that he try everything in his box, it is often hard to tell for sure what was just opened and left and what was eaten, as it all comes home in a big mess; I am left with his word on the subject.

So what is on the hit parade in this house over the last month?:

  • Pasta Salad with veggies only
  • Hot pasta with pesto and meatballs
  • Burrito, Burrito, Burrito and more Burrito
  • Ploughman’s lunches with various ingredients depending on the leftovers, including one time: sliced apples and veggies with peanut butter as a dip along with cheese and a whole grain roll.
  • Cold baked chicken fingers with veggies and whole grain chips.
  • Peanut Butter and Honey Sandwiches

This month I am going to try some more hot dishes, like soups, chili’s, stews and pasta. I will let you know how it goes.  What has been working for you? I want to know.

We don't pack lunches yet (the kids are still at home with me), but here are some lunch ideas we've used lately:

- Cream cheese & jam sandwiches
- Homemade lunchables (meats and cheeses cut into shapes with crackers)
- Muffin Tin Meals
- Breakfast for lunch (eggs, grits, waffles)
