Healthy Green Foods for St. Patty's Day

- Celery

- Cucumber

- Romaine Lettuce Leaves

Here is a hint to save time and make a bit of a prettier spread:
- Purchase deli corned beef and get it sliced to how many portions you need.
- If boiled cabbage is going to be a big flop in your classroom, get cole slaw instead; also available at the deli.
- If you don’t have very small potatoes, cut them all to the same size for even and quick cooking. Drain and season with salt, pepper, butter and chopped fresh parsley.
- Irish soda bread is not for everyone and is better if served warmed. Don’t go overboard with it unless you plan on bringing it home afterwards.
