Healthy Green Foods for St. Patty's Day

  • Pesto Pasta
  • Green Fruit Salad
    • Kiwi
    • Grapes
    • Green Apple
    • Pears
    • Honeydew Melon
  • Guacamole Dip with corn tortilla chips (sometimes you can find them green)
Or you can have the traditional meal of corned beef and cabbage with boiled potatoes and Irish soda bread.

Here is a hint to save time and make a bit of a prettier spread:
  • Purchase deli corned beef and get it sliced to how many portions you need.
  • If boiled cabbage is going to be a big flop in your classroom, get cole slaw instead; also available at the deli.
  • If you don’t have very small potatoes, cut them all to the same size for even and quick cooking. Drain and season with salt, pepper, butter and chopped fresh parsley.
  • Irish soda bread is not for everyone and is better if served warmed. Don’t go overboard with it unless you plan on bringing it home afterwards.
